Comfort Food--Matzo Brei

You know how it is when you just crave something warm and simple and comforting? Well lately I've had a yen for Matzo Brei. It is really simple to make, but is very satisfying to eat I've seen many different variations, but here is the one that I like:

Matzo Brei
1 Matzo cracker
1 egg
3 T butter

Break Matzo cracker into small pieces in a colander. Run water over the cracker until it is damp. Drain. Move cracker pieces into a bowl and mix in one egg until all the pieces are coated and the egg is beaten a bit.
Heat butter in a frying pan over medium heat until the foam subsides. Add cracker/egg mixture and fry, stirring until the egg is cooked and the mixture starts to brown a little. Season with salt and pepper as desired.
Pour on a plate and serve immediately.
Serves 1.
